Gluten-Free, Vegan, Rudolph the Gingerbread Cookie

GINGERBREAD
Ingredients:
1 cup vegan butter, softened
1 cup sugar
1 cup molasses
1 egg/ egg replacer
4 cups sifted all-purpose flour
1 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
2 tsp ground cloves
2 tsp ground ginger
1 tsp ground nutmeg
Directions:
In the bowl cream together butter, and sugar until smooth. Stir in molasses and egg. Combine, flour, salt, baking powder, baking soda, cinnamon, cloves, ginger, and nutmeg; blend into the molasses mixture until smooth.
cover and chill for at least an hour.
Preheat oven to 350* and line your baking sheet with parchment paper.
On a lightly floured surface roll the dough out into 1/4 inch thickness. CUt into desired shapes with cookies cutters.
Bake for about 10 minutes, until firm. Let cool for 10 min on pan, Remove and let cool on wire racks. When cool, frost and decorate!
ROYAL ICING
Ingredients: 1 Egg White
Pinch of Salt
1 tsp. Lemon Juice
1 cup confectioners’ sugar [powdered sugar] Directions:
Beat ingredients until light and fluffy and foam peaks. Add more confectioners’ sugar, if needed [ 1 tbsp at a time works best].
If you’re planning to store your icing, store in an air tight container or cover it with a damp cloth because it does dry quickly!
