No Rollout - Soft Sugar Cookies ( Gluten free, Dairy Free and Vegan Options)

It is so good- and honestly we enjoy the vegan option the best! We stand by it’s deliciousness that we doubled the recipe for you. So grab your cup of milk, coffee or tea and delight in these soft, chewy sugar cookies — no rollout:
Doubled Soft Sugar Cookies
Makes: ~36 cookies
Dry Ingredients
3 cups gluten-free flour ( we love Bob’s 1:1)
1 tsp baking soda
1 tsp baking powder
½ tsp salt
Wet Ingredients
1 cup vegan butter (or solid coconut oil)
1 ½ cups sugar
2 large eggs
(Or 2 flax eggs: 2 tbsp flaxseed meal + 6 tbsp water)
4 tsp vanilla extract
2–4 tbsp dairy-free milk as needed for dough texture
Optional (highly recommend)
4–6 tbsp sugar for rolling
Instructions
Preheat oven to 350°F and line baking sheets with parchment.
Whisk dry ingredients in one bowl.
Beat coconut oil/vegan butter + sugar until creamy.
Add eggs (or flax eggs) + vanilla.
Add dry ingredients; mix until soft dough forms.
Add DF milk 1 tbsp at a time if dough is dry.
Scoop dough into balls; (We use our tbsp as a scoop and roll with our hands.) roll in sugar if desired.
Bake 9–11 minutes until edges are set. (We end up liking ours a little more crunchy on the outside so we bake for 12 min total- just be sure to check them. Everyone’s oven is different.)
