Have any of you ever gotten a recipe from your grandmother, or great grandmother or call them to get a recipe and the recipe usually calls for a handful of this and pinch of that, or enough for it to feel like such and such. Well, lets just say my grandmothers Kuchen recipe is one of those, unfortunately I didn’t realize this until I started mixing ingredients and by then I figured I’m already into this there is no backing out now!


My great Kuchen baking experience started the night before, after my day long of cookie baking I decided that it would be best to mix up my kuchen dough to let it rise over night so it was all ready in the morning. While I was mixing I noticed it said one yeast... What the heck is one yeast! So I called my grandmother, to find out it’s one packet! Naturally, I didn’t have packets of yeast, I had a jar, and when I asked my grandmother what a packet was equivalent to she told me she just uses the packet and not to call tomorrow because she will be out of town. Oh GREAT! .... Well, to say the least, I found out that one packet is approximately 2 1/4 tsp of yeast and before I went to bed I walked into my kitchen and had a Monster Dough Ball taking over my kitchen that I had to tame before I could crash for the night.


I woke up and went right to work, no coffee no breakfast just figured I needed to kneed this dough before it takes over the rest of my kitchen. Nonetheless I though the recipe made one kuchen because it didn’t state how many kuchens it yielded nor did grandma tell me this; so I doubled it! Further more after some investigating her recipe yields 3-4 kuchens!!

Dough

  • 2 cups warm milk

  • 1/2 cup sugar

  • 1 (1/4 oz.) package yeast

  • 6 cups flour

  • 1/2 cup oil

  • 1 teaspoon salt

  • 2 eggs

Filling

  • 1 quart heavy cream

  • 6 eggs

  • 1 cup sugar

  • dash salt

  • Fruit or topping of choice

  • Cinnamon & Sugar mixture


Instructions

  1. Mix all dough ingredients together well. Form dough into one large ball and place in well oiled bowl. Cover and set in a warm place to rise until doubled.

  2. While the dough is rising, combine all filling ingredients (except fruit, cinnamon, and sugar) in a small saucepan over the stove. Cook on medium heat, stirring until thick. Set aside and let cool.

  3. Prepare your fruit of choice. Divide dough into balls and roll to fit into pie pans.

  4. Lay fruit on top of dough and add filling (about 1/2 cup each kuchen). Sprinkle with equal parts sugar and cinnamon.

  5. Bake at 350 degrees for about 20 minutes. Custard filling will set as kuchen cools. Store in refrigerator or freeze once cool.
